Tis the season for Pumpkin Flavoured everything! This is a deliciously sweet coffee that would wrap up a dinner with friends perfectly. There’s no need to hit the coffee shop when you’ve got a recipe like this in your arsenal.
I had to find a way to use up some of the pumpkin puree I had left over from my last pseudo-baking session, when I made Pumpkin Cheesecake Cinnamon Rolls. And really, you can never have too many pumpkin-flavoured goodies at this time of year anyway ;-).
I stumbled across this recipe for Pumpkin Spice Latte from The Prairie Cottage. It’s creamy and pumpkin-y and absolutely yummy! I’ve scaled it down a bit to just one regular mug-sized serving. Here’s my take on it:
Pumpkin Spiced Latte
Ingredients
- 1 cup milk
- 1 tbsp pumpkin puree
- 1 tbsp sugar (more or less, to taste)
- 1 tsp vanilla
- 1/4 tsp pumpkin pie spice
- 1/4 cup strong coffee (or espresso)
Instructions
- Mix milk, pumpkin and sugar in a saucepan.
- Stir over medium heat, til steaming.
- Remove from heat.
- Add vanilla and pumpkin pie spice.
- Whisk or blend until frothy.
- Pour into mug.
- Add strong coffee.
- Enjoy!
Mmm, yum! I made it a single-serving recipe to keep myself in line, but there’s no reason why you couldn’t make more at once. Just multiply each ingredient by the number of servings you’d like to make!
