Easiest Crockpot Dinner Ever! #HiddenValleyGFChallenge

The temperature is dropping, and it’s beginning to look more and more like a Christmas card landscape out there — time to break out the crockpot!  There is nothing better than coming home to the delicious smell of dinner cooking, even though you spent the day running errands or working.  And that is exactly what I walked into yesterday!

Hidden Valley has these amazing dressings that are not just for salad anymore!  They were kind enough to send me 3 of their Ranch varieties: Ranch, Cheesy Ranch, and Spicy Ranch.  They asked if I could come up with a new gluten-free dinner recipe, and I believe I did it!

Now I don’t know about you, but when the Christmas season comes along, the last thing you really want to do is spend forever making dinner every night.  There are just far too many other things to do.  I always fall back on our family favourites, and one of those is tacos.  We’ve always had beef tacos before, but this time I thought we’d switch it up and try chicken tacos, using the dressing from Hidden Valley.  It was very much an experiment, but I think it turned out really well!  These tacos are bursting with flavour, and so good with mushrooms and tomatoes.  You’ll want to keep a napkin handy though, because like most tacos, these are messy!

And because we used corn tortillas, these tacos are completely gluten-free, making this a perfect recipe for everyone.  It’s perfect for post-tobogganing parties, holiday pot lucks, or for coming home to after a long day of Christmas shopping!

-6 frozen boneless and skinless chicken breasts

-1 cup Hidden Valley Cheese Ranch Dressing (or give Hidden Valley Spicy Ranch a try!)

-1 cup 1% Sour Cream

-corn taco shells

-toppings (ie. sliced cherry tomatoes, sliced mushrooms, grated cheese, shredded lettuce, etc.)

– Mix Dressing and Sour Cream together in a bowl.

– Place frozen chicken breasts in crockpot.

– Pour mixture over chicken.

– Cook on low for 4-6 hours.

– About 30 minutes before serving, shred the chicken by pulling two forks through it.  Continue cooking until serving.

– Serve family-style with corn taco shells and various toppings.

*Note: You could use fresh or thawed chicken with this recipe if you like.  Just adjust the cooking time accordingly.

    It is so nice that Hidden Valley Dressings are multipurpose. Looks like some good eating. And I love using a crock pot to cook food. No need to spend so much time in the kitchen that way. To be honest, we are not big fan of tacos in this house, but I want to try it one of these days. Thanks for sharing!

    We Love crockpot chicken tacos but we are not a huge ranch family 🙁 we use a jar of salsa and chicken taco seasoning!
